I am looking for a good old fashion Louisiana gumbo recipe, something from the deep south, anybody got one?

I used her Duck and Sausage Gumbo recipe only I substituted Goose for the Duck. My wife came home fromt he movies with our daughters and the pot had just finished cooking. She took one spoonful, nothing, two spoonfuls, nothing.....after the third spoonful she looked at me and said:
Daddy.....You're the Man. That little book is fantastic

Thanks alot for the info, I'll look into it. Ive neve made a gumbo before and I want to make sure I get the roux right.

I did find one on gumbopages.com for some seafood.

I thought something like gumbo would be good for a dish for a superbowl party.

I have come across a pretty easy recipe for gumbo.

Now keep in mind that I am a native Georgian who has been in Cajun Country for a little over 5 years. One option that we have down is to buy a pre-made roux in a jar. Now no self-respecting Cajun would condone this, however many will use it from time to time - even if some will not admit it. This former Georgia boy will use it. I don't know if it is even available where you are, but if it is, here is an easy recipe.

4 quars of water
4 heaping tblsp of roux
3-4 chicken breasts, cut up
1 lb of smoked sausage or andouille
12 oz of smoked tasso, if available
1 large onion, chopped
1 bell pepper, chopped
2 pods of garlic, minced
2 stalks of celery choppped
1/2 cup of green onions chopped
1/2 cup of parsley chopped

Dissolve roux in water over med. heat and boil for 1/2 hour. Add chicken, sausage, tasso and vegetables. Bring to a boil, lower to med. heat and cook until chicken and vegetables are tender - about 1 1/2 hours. Add green onions and parsley about 15 minutes before done. Season to taste with salt, pepper, etc.

Store bought roux in the jar is the greatest. Dis kajun haz ban use it for year and year, sans eat come out. Go got u some.
